Use a telephoto lens

This is not going to be a big problem for most of our readers, because as the last survey shows, most of you, complement your photographic equipment with a telephoto lens as the first option. For those who do not have a telephoto lens, try renting it or borrowing it from an acquaintance who has one.

What do we do with the flash?

There are times when we cannot use the flash. However, in modern churches it is generally allowed to use the flash. Unless expressly forbid it in an ancient cathedral, let’s not be afraid of its use.

When using it in a closed place, it will enlighten us enough to get the subjects we photograph well.

Taking advantage of the fact that we talked about flash, we tell you something that made me very funny: In the church there was a guy with a brand-new Canon 5D Mark II and a Canon supermegaflash. So far nothing weird. However, he was wearing the lens hood on the lens. Of course, this would generate some vignettes in the photos difficult to correct in the post processed. So, please, the lens hood for when it is very sunny or raining, not to try to make the lens of our camera bigger.

In spite of everything, there are flashes that allow you to use a parasol without causing vignetting in the photos. We should always read the instruction manual to make sure, but if in doubt, better do without it.

Control the ISO

Although we are in a closed place in low light, the flash will help us, so it is best that we lower the ISO and thus save us from seeing noise, especially if we are going to make a cut of the photos.

Thanks to the fact that the flash will illuminate us, we can use ISO 800-1600 without problems. If we decide not to use the flash (or it is not allowed) we will have no choice but to pull ISO 3200 onwards. Here our compact will not be the best option.

Shoot in shutter priority

In these situations, people are quite still as a rule, so with a speed of 1/60 it will be more than enough. If we see that the photos are a bit shaken we can play until we get well defined photos.

The depth of field will give us a bit the same, because given the circumstances of low light, the camera will tend to open the diaphragm to the maximum and play with the ISO to establish a correct exposure from the shutter speed.

When playing only with black and white (and intermediate degrees of gray) it is easier to notice the noise produced by the high ISO. So, if you have to upload the ISO do it, but be very careful.

Bolognese sauce

Ingredients

300 g of minced beef; 75 g bacon in cubes; 1 onion; 1 branch of celery; 1 carrot; 400 ml of tomato sauce; 4 spoons of olive oil; 2 spoons of white wine; 2 spoons of chopped parsley; Salt; Pepper.

Elaboration

Chop the onion, celery and carrot. Heat the oil in a casserole and brown the bacon and minced meat. Add the chopped onion, celery and carrot, salt and pepper and cook 10 minutes over medium heat. Add tomato sauce and wine, mix and cook 10 minutes more with the covered casserole. Add the chopped parsley and mix everything well.

Amalfitana sauce

Ingredients

400 ml of tomato sauce; 8 anchovies in oil; 2 cloves of garlic; 2 spoons of olive oil; 8 leaves of basil; Pepper.

Elaboration

Pesto sauce

Wash the basil leaves and dry them well. Peel the garlic and pour it into the blender glass with the basil leaves, the pine nuts, the parmesan cheese, the oil and a pinch of salt and pepper. Mash 2 minutes. Add more olive oil if a less dense pesto is desired.

About this sauce: The name of the pesto is due to the container where ingredients are traditionally mashed, pestaio in Italian, mortar for us. Bacon sauce with cheese

Ingredients

Remove the seeds and the stem to the chilli pepper and chop it. Pour the bacon strips in a pan with the oil. When they are transparent, add the chilli pepper and cook 1 minute. Why some wines can be stored for a long time?

They say that wine, the older, the better. But it is only one sentence, it is not a general rule, since there are wines that can be aged for a long time, and others that would not stand more than two years. Why does this happen and how do we know what wines we can keep?

Also, against departure, we can hear it said that it is not true that all wines improve over time. And here it was time to expand a little more on this subject, which we have already discussed in previous notes.

The problem is knowing how long we are talking. Freshly bottled wine is hard, tense, if you want the expression.

You need a rest in stowage, to amalgamate its compounds and rest. It’s like the food did you see?, the next day is richer, because its ingredients are coupled. While it is true that tasting wines directly from the barrels is an exciting experience, the importance of bottle storage is superlative. In this last example, we would say that the wine would be optimal between 3 and 8 years after the harvest. Always, remember, it is in the case of wines called “quiet” (neither sweet, nor liquor, nor sparkling), and by generic rule. Of course, there are cases of white wines with barrels that are great after 10 years. But it is not the norm. On the other hand, the example of rosé wines is similar to that of whites.

That is because the tannin load is similar to that of a white barrel, since the maceration period was short (4 to 18 hours), just to get that pink colour. It will depend on the vinification technique, the maceration period, and many others. So then, we would have a wine to consume perfectly between 1 to 6 years of its harvest date. Even many white wines with casks have more structure than certain rosés.

The different types of grapes come into play, the ripening moments in the harvest, the yields, the climate, the irrigation, the winemaking, and so on. Consumption limits

How long does a barrel last?

Oak wood barrels are the containers where wines are traditionally stored, but what do we know about oak and barrels?

Oak wood has always been used as a material for containers in direct contact with the wine as it is a material of great resistance, on the one hand, and by not altering the wine giving it a pleasant taste, on the other.

The most used containers made with oak are known as barrels, originating in the production of wines from Bordeaux (France), with a capacity for 220 litres of wine.

In practice there are two usual types of oak wood with which the barrels are made: American and French.

The Spanish oak, increasingly used, is usually only useful for those grown in Northern Spain (from Galicia to Navarra). Another alternative is the Romanian oak, little used.

The American oak is somewhat harder and its wood more productive (about 10 barrels of 220 litres per cubic meter of wood), while the French is a little softer which offers a somewhat lower productivity (6 barrels per 1 M3).

As for the taste contribution to wine, American oak offers a resin aroma and flavour, while French brings a softer aroma and flavour, with vanilla memories.

The way wood has been treated also has an impact on wine. Thus, the dried and cured oak brings less flavour but stabilizes and gives the wine a good colour. On the other hand, the oak cured with stove yields more aromatic substances to the wine, but does not stabilize the colour correctly.
